Winemaking
Tallarook’s trademark wild yeast ferment in older French oak, followed by extended time on lees with battonage aims to produce smooth, powerful and intense wines of great texture and complexity.

Tasting Notes

Eye: Vibrant straw colour
Nose: Aromas of lemon, spice and green tea are interwoven with subtle, savoury oak complexity
Palate: Faithful to the nose, the palate is complex with mandarine and passionfruit on the the mid palate, exhibits a rich mouth feel and leads to a clean, refreshing acid finish with a lingering, delicious after taste.

Cellaring
Given competent cellaring, we expect this wine to show ongoing evolution with increasing complexity for at least five years from the year of vintage

Tallarook
is situated on an elevated yet protected site, among rugged hills on the northern slopes of the Great Dividing Range, in Central Victoria, Australia. The original Tallarook Vineyards form part of a property named Dabyminga. Established first in the 1980s and purchased in 1992 by the Riebl family, these vineyards and the wines produced under the TALLAROOK® label represent a pioneering effort for the Tallarook district.

The land was once part of the territories of the Goulburn Aboriginal tribes. Before white settlement, it was one of the most densely populated areas in Australia. Dabyminga derives from "Ab'minga" (snaketracks) in the language of the Natramboolok tribe.In the same language, Tallarook means "Call of the wattlebird".
